Food is a love language. At your wedding reception, it is how you welcome your family and thank your guests for celebrating with you.
But how do you go from a blank page to a cohesive, mouth-watering menu that perfectly reflects your relationship? You shouldn’t have to settle for a generic “Choose A or B” banquet list.
As the owner of Catering by Bryce, I am taking you behind the scenes to show you exactly how our culinary team designs custom, unforgettable tasting menus for couples across the Wasatch Front.
Phase 1: The Culinary Consultation
Before we ever turn on an oven, we sit down and talk. We want to know the story behind the food you love.
During our initial consultation, we ask questions like:
- Where did you go for your first date?
- What is your favorite local Utah restaurant?
- Are you hosting a rustic barn wedding in Provo or an elegant, historic affair at The Monarch in Ogden?
The vibe of your venue dictates the style of service. A mountain retreat in Park City might call for elevated, hearty comfort food, while a downtown Salt Lake City gala leans toward formal plated dinners.
Phase 2: Building the Initial Flavor Profile
Once we understand your vision, we draft a proposed menu. This is where we incorporate local, seasonal elements.
If you are getting married in the summer, we might source fresh produce from places like Heber Valley to ensure the salads are vibrant and crisp. We also strategically plan for the inevitable dietary restrictions during this phase. We ensure the vegan, gluten-free, and dairy-free options are just as deliberate and delicious as the main entrée, rather than feeling like a last-minute afterthought. Read our guide on navigating dietary restrictions.
Phase 3: The Private Tasting Experience

This is consistently rated as the best part of wedding planning. You (and usually two trusted guests) will join us for a private tasting session.
We prepare the proposed dishes exactly as they will look and taste on your wedding day.
- What to bring: An empty stomach, an open mind, and honest opinions.
- What to expect: We will walk you through the flavor profiles, discuss portion sizes, and evaluate the visual presentation of the plates.
Phase 4: The Refinement and Final Polish
A tasting is a highly collaborative process. We want your feedback.
If you want the braised meats a little spicier, or if you decide to swap the garlic mashed potatoes for roasted fingerlings to better match a rustic Utah County vibe, we make those adjustments. We tweak, season, and refine until you feel the menu is a perfect 10/10.
We also finalize the logistics during this phase. We discuss the exact timeline of the reception, the staff-to-guest ratio, and how the food will be kept perfectly hot from the kitchen to the buffet line.
